Preparation
-
1.In a large mixing bowl, combine the flour, yeast, sugar, and salt. Gradually add the warm water and olive oil, mixing until a dough forms.
-
2.Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise for 1 hour, or until doubled in size.
-
3.Preheat the oven to 220°C (425°F).
-
4.In a small bowl, mix together the tomato sauce, dried oregano, dried thyme, and dried rosemary. Set aside.
-
5.In another bowl, combine the mashed kiwi and chopped mint leaves. Add the lamb slices and marinate for 15 minutes.
-
6.Roll out the dough into a thin circle and transfer it to a greased pizza pan or baking sheet.
-
7.Spread the tomato sauce mixture evenly over the dough, leaving a small border around the edges.
-
8.Arrange the marinated lamb slices, caramelized onions, and sliced mushrooms on top of the sauce. Sprinkle the shredded mozzarella cheese over the toppings.
-
9.Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted and bubbly.
-
10.Remove from the oven and let it cool for a few minutes before slicing and serving.
Treat your ingredients with care...
- Lamb — For best results, choose lean lamb cuts such as leg or loin. Trim any excess fat before slicing thinly.
- Kiwi — Select ripe kiwis for mashing. The natural enzymes in kiwi help tenderize the lamb while adding a subtle tangy flavor.
- Caramelized onions — Slowly cook the sliced onions over low heat until they turn golden brown and develop a sweet, rich flavor.
Tips & Tricks
- For a vegetarian version, substitute the lamb with grilled eggplant or roasted pumpkin.
- Experiment with different New Zealand cheeses like cheddar or blue cheese for a more intense flavor.
- Add a touch of sweetness by drizzling honey over the pizza before serving.
- Serve the pizza with a side of fresh mixed greens dressed with a light vinaigrette to balance the richness of the toppings.
- Customize the spice level by adding sliced jalapeños or crushed red pepper flakes for an extra kick.
