While the original Greek Mandolato is made with a combination of almonds and honey, the Jordanian-inspired Almond Delight incorporates the Middle Eastern touch of rosewater, which adds a distinct floral aroma to the dessert. 1.In a large mixing bowl, combine the chopped almonds and honey. Mix well until the almonds are evenly coated.

2.In a saucepan, combine the sugar, water, lemon juice, and salt. Heat over medium heat, stirring constantly, until the sugar has dissolved and the mixture reaches a syrupy consistency.

3.Remove the syrup from heat and stir in the rosewater and vanilla extract.

4.Pour the syrup over the almond-honey mixture and mix until well combined.

5.Line a baking dish with parchment paper and transfer the mixture into the dish. Press it down firmly to create an even layer.

6.Allow the mixture to cool and set at room temperature for at least 4 hours, or preferably overnight.
