Ingredients
In this Jordanian adaptation, we incorporate traditional Middle Eastern spices like cumin, coriander, and sumac to infuse the dish with a unique flavor profile. The grilling technique remains the same, but the overall taste and ingredients have been tailored to suit the Jordanian palate. 7.Serve the grilled meat and vegetables with rice or flatbread, and enjoy the flavors of Jordan.
Treat your ingredients with care...
- Lamb — For tender and juicy lamb, choose cuts from the leg or shoulder. Trim excess fat before marinating.
- Chicken — Use boneless, skinless chicken thighs for the best flavor and tenderness.
- Sumac — Sumac adds a tangy and citrusy flavor. If unavailable, you can substitute with lemon zest.
Tips & Tricks
- Soak wooden skewers in water for 30 minutes before grilling to prevent them from burning.
- Baste the meat and vegetables with the marinade while grilling for extra flavor.
- Serve the dish with a side of yogurt sauce or tahini for a creamy and refreshing contrast.
