Preparation

1.In a large pot, bring the beef broth to a simmer over medium heat.

2.Cook the ramen noodles according to the package instructions. Drain and set aside.

3.In a separate pan, heat the vegetable oil over medium-high heat. Add the thinly sliced beef and cook until browned. Remove the beef from the pan and set aside.

4.In the same pan, add the onion, garlic, carrot, and red bell pepper. Sauté until the vegetables are tender.

5.Add the paprika, dried thyme, salt, and black pepper to the pan. Stir well to combine.

6.Return the cooked beef to the pan and mix with the vegetables.

7.Pour the beef broth into the pan and bring to a boil. Reduce the heat and let it simmer for 10 minutes.

8.Stir in the soy sauce and red wine vinegar. Simmer for an additional 5 minutes.

9.Divide the cooked ramen noodles into serving bowls. Ladle the hot broth, beef, and vegetables over the noodles.

10.Top each bowl with a soft-boiled egg and garnish with fresh parsley.
