1.Cook the sushi rice according to package instructions and let it cool.

2.Preheat the oven to 200°C (400°F). Place the plantain slices on a baking sheet and bake for 10-15 minutes until golden and tender.

3.In a small bowl, combine the lime juice, orange juice, soy sauce, garlic powder, cumin, paprika, and salt. Mix well.

4.Marinate the shrimp in the citrus-infused marinade for 10 minutes.

5.Lay a bamboo sushi mat on a clean surface and place a nori sheet on top.

6.Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

7.Arrange the avocado slices, black beans, plantain slices, and marinated shrimp in a line across the center of the rice.

8.Using the bamboo mat, roll the sushi tightly, applying gentle pressure to seal it.

9.Repeat the process with the remaining ingredients.

10.Slice the sushi rolls into bite-sized pieces and serve with pickled ginger and soy sauce.
