Preparation

    Heat the vegetable oil in a frying pan over medium heat.

    Fry the plantain rounds until golden brown on both sides. Remove from the pan and drain on paper towels.

    In a bowl, combine the black beans, pineapple, avocado, mango, papaya, red bell pepper, red onion, tomato, cilantro, lime juice, salt, and pepper. Mix well.
