Ingredients
In this Djiboutian adaptation of Tarte al d'jote, we infuse the dish with the vibrant flavors of Djiboutian cuisine. The original Belgian recipe is traditionally made with chard, but we substitute it with spinach, which is more readily available in Djibouti. Additionally, we incorporate Djiboutian spices such as cumin, coriander, turmeric, and fenugreek to enhance the flavor profile and give it an authentic Djiboutian twist. Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large pan, sauté the onion and garlic until translucent.

3.Add the spinach to the pan and cook until wilted.

4.In a bowl, whisk together the eggs, heavy cream, cumin, coriander, turmeric, fenugreek, salt, and pepper.

5.Add the spinach mixture to the bowl and mix well.

6.Roll out one sheet of puff pastry and line a tart pan with it.

7.Pour the spinach mixture into the tart pan.

8.Cover the filling with the second sheet of puff pastry, sealing the edges.

9.Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown.

10.Allow the tart to cool slightly before serving.
