Preparation

1.In a large bowl, combine the ground pork, Maldivian curry powder, grated coconut, minced garlic, grated ginger, fish sauce, soy sauce, sugar, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.

2.Shape the mixture into small meatballs, about 2-3cm (1 inch) in diameter.

3.Bring a pot of water to a boil and cook the rice noodles according to the package instructions. Drain and set aside.

4.In a large saucepan, bring 1 liter (4 cups) of water to a simmer. Add the meatballs and cook for about 10-12 minutes, or until they are cooked through.

5.Divide the cooked rice noodles among serving bowls. Ladle the hot broth and meatballs over the noodles.

6.Garnish with fresh herbs and serve with lime wedges on the side.
