Ingredients
In this Batak-inspired version of Florentines, we incorporate the unique flavors of Batak cuisine by adding cinnamon, cloves, and cardamom to the traditional caramel base. Additionally, we use dark chocolate instead of the usual milk chocolate to complement the richness of the Batak spices. These adaptations give the Florentines a distinct Sumatran twist, making them a delightful fusion of Italian and Batak flavors. 1.In a medium saucepan, combine the sugar, heavy cream, and butter. Cook over medium heat, stirring constantly, until the mixture reaches a temperature of 240°F (115°C) on a candy thermometer.

2.Remove the saucepan from heat and stir in the ground cinnamon, cloves, and cardamom.

3.Add the sliced almonds, candied orange peel, and candied ginger to the saucepan. Stir until all the ingredients are well coated with the caramel mixture.

4.Drop spoonfuls of the mixture onto a parchment-lined baking sheet, shaping them into round discs. Allow them to cool and harden for about 15 minutes.

5.Once the Florentines have hardened, drizzle melted dark chocolate over each disc.

6.Let the chocolate set completely before serving.
