Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.

3.Pour in the vegetable broth, coconut milk, diced tomatoes, bell peppers, mushrooms, carrots, zucchini, bok choy, and tofu. Stir to combine all the ingredients.
