Ingredients
In this Sindhi adaptation of Macaroni béchamel, we incorporate traditional Sindhi spices such as cumin, coriander, and turmeric to infuse the dish with a unique flavor. Additionally, we use local Sindhi cheese instead of the traditional Greek cheese, giving the dish a distinct taste. 1.Cook the macaroni according to package instructions until al dente. Drain and set aside.

2.In a large pan, heat ghee over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

3.Add cumin powder, coriander powder, and turmeric powder to the pan. Stir well to combine the spices with the onions and garlic.

4.In a separate bowl, whisk together the milk and all-purpose flour until smooth. Slowly pour the milk mixture into the pan, stirring continuously.

5.Cook the sauce over low heat, stirring constantly, until it thickens and coats the back of a spoon. Season with salt to taste.

6.Preheat the oven to 180°C (350°F).

7.Add the cooked macaroni to the pan with the sauce and mix well to coat the macaroni evenly.

8.Transfer the macaroni mixture to a baking dish and sprinkle the grated Sindhi cheese on top.
