Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

2.Add the cumin powder, turmeric powder, and ginger paste to the pot. Stir well to combine the spices with the onion and garlic.

3.Add the diced carrots and potatoes to the pot, and cook for a few minutes until they start to soften.

4.Pour in the vegetable broth and water, and bring the mixture to a boil.

5.Reduce the heat to low, and add the rinsed lentils to the pot. Simmer for about 20-25 minutes, or until the lentils are tender.

6.Stir in the plain yogurt and chopped spinach, and cook for an additional 5 minutes.

7.Season with salt to taste.
