Preparation

1.In a large pot, add the chicken pieces, onions, garlic, ginger, cinnamon sticks, star anise, and cloves.

2.Fill the pot with enough water to cover the chicken and bring to a boil. Skim off any impurities that rise to the surface.

3.Reduce the heat to low and simmer for 1.5 to 2 hours, until the chicken is tender and the flavors are well infused.

4.Remove the chicken from the pot and set aside to cool. Once cooled, shred the chicken into bite-sized pieces.

5.Strain the broth to remove any solids and return it to the pot. Discard the solids.

6.Add fish sauce, sugar, and salt to the broth. Adjust the seasoning according to taste.

7.Cook the rice noodles according to package instructions. Drain and set aside.

8.To serve, divide the cooked rice noodles among serving bowls. Top with shredded chicken and ladle the hot broth over the noodles.
