In this Kodava adaptation, we replace the traditional Croatian Šurlice pasta with rice noodles, which are commonly used in Kodava cuisine. The spices are also adjusted to reflect the flavor profile of Kodava cuisine, incorporating black pepper, cardamom, and cinnamon for a distinctively aromatic and spicy taste. Preparation

1.Cook the rice noodles according to package instructions. Drain and set aside.

2.Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until golden brown.

3.Add the minced garlic and grated ginger to the pan and cook for another minute.

4.Add the diced tomatoes, black pepper, turmeric powder, coriander powder, cumin powder, red chili powder, cinnamon stick, and crushed cardamom pods to the pan. Stir well to combine the spices with the onion mixture.

5.Cook for 5 minutes, allowing the tomatoes to soften and the spices to release their flavors.

6.Add the shrimp to the pan and cook until they turn pink and are cooked through, approximately 3-4 minutes.

7.Pour in the coconut milk and season with salt to taste. Stir well and simmer for another 5 minutes to allow the flavors to meld together.

8.Serve the shrimp curry over the cooked rice noodles. Garnish with fresh cilantro.
