Ingredients

In this Ghanaian adaptation, we replace the traditional flatbread used in the Tombik Döner with a soft and fluffy Ghanaian-style wrap. Additionally, we incorporate jollof rice, a staple in Ghanaian cuisine, to add a unique twist to the filling. The spiced lamb is marinated with a blend of Ghanaian spices, giving it a distinct flavor profile that sets it apart from the original dish. We alse have the original recipe for Tombik Döner, so you can check it out.

Preparation

  1. 1.
In a bowl, combine the vegetable oil, ground ginger, ground garlic, ground paprika, ground cumin, ground coriander, ground turmeric, chili powder, salt, and pepper. Mix well to form a paste.
  2. 2.
Add the sliced lamb to the bowl and coat it thoroughly with the spice paste. Allow the lamb to marinate for at least 1 hour, or overnight for maximum flavor.
  3. 3.
Heat a grill or skillet over medium-high heat. Cook the marinated lamb slices for 3-4 minutes on each side, or until they are cooked to your desired level of doneness.
  4. 4.
Warm the Ghanaian-style wraps in a dry skillet or microwave.
  5. 5.
To assemble the wrap, spread a generous amount of shito sauce on the wrap. Add a layer of jollof rice, followed by the cooked lamb slices, fried plantains, lettuce, tomatoes, onions, and cucumber.
  6. 6.
Roll the wrap tightly, tucking in the sides as you go. Secure with a toothpick if needed.
  7. 7.
Serve the Ghanaian-inspired Spiced Lamb Wrap immediately and enjoy!

Treat your ingredients with care...

  • Lamb — For the best results, choose lean cuts of lamb and slice them thinly against the grain to ensure tenderness.
  • Shito sauce — Adjust the amount of shito sauce according to your spice preference. It can be quite hot, so start with a small amount and add more if desired.
  • Jollof rice — You can prepare the jollof rice in advance to save time. Leftover jollof rice works perfectly in this recipe.

Tips & Tricks

  • If you prefer a milder flavor, reduce the amount of chili powder in the spice paste.
  • Experiment with different fillings such as avocado, mango, or Ghanaian-style coleslaw for added freshness and texture.
  • If you can't find Ghanaian-style wraps, you can use tortillas or flatbreads as a substitute.
  • For a smoky flavor, grill the lamb slices over charcoal instead of using a skillet.
  • Serve the wrap with extra shito sauce on the side for those who enjoy an extra kick of heat.
