Preparation

1.Heat the vegetable oil in a wok or large skillet over high heat.

3.Add the sliced onion and stir-fry for another 2 minutes until slightly softened.

4.Add the snow peas, bok choy, and mushrooms to the wok, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.

5.In a small bowl, mix together the soy sauce and oyster sauce (if using).

6.Pour the sauce mixture into the wok and stir-fry for an additional 1-2 minutes.

7.Stir in the cornstarch mixture to thicken the sauce.
