Ingredients
In this Singaporean adaptation of the German Quarkspeise, we infuse the quark with pandan leaves and coconut milk to add a local touch. The traditional German recipe is transformed into a tropical delight by incorporating a sweet and tangy mango compote as a topping, which complements the creamy quark perfectly. Preparation

1.In a saucepan, combine the quark, coconut milk, pandan leaves, and sugar. Heat over low heat, stirring continuously until the mixture is well combined and slightly warmed.

2.Remove the pandan leaves from the mixture and discard.

3.Pour the quark mixture into serving bowls or glasses and refrigerate for at least 2 hours to allow it to set.

4.Meanwhile, peel and dice the mangoes. In a separate saucepan, combine the diced mangoes, lime juice, and a tablespoon of sugar. Cook over low heat until the mangoes are soft and the mixture has thickened slightly.

5.Remove the quark from the refrigerator and spoon the mango compote over the top.

6.Garnish with fresh mint leaves and serve chilled.

- Pandan leaves — If fresh pandan leaves are not available, you can use pandan extract or essence as a substitute. Use 1 teaspoon of pandan extract for every 4 pandan leaves.
