Ingredients
In this Balinese adaptation of Amaretti, we incorporate local Balinese ingredients to infuse the cookies with the flavors of the region. Preparation

1.Preheat the oven to 160°C (325°F) and line a baking sheet with parchment paper.

2.In a large bowl, combine the almond flour, desiccated coconut, powdered sugar, ground cardamom, and salt.

3.In a separate bowl, whisk the egg whites until frothy. Add the vanilla extract and continue whisking until soft peaks form.

4.Gently fold the egg whites into the dry ingredients until well combined.

5.Using a tablespoon, scoop the dough and roll it into small balls. Place the balls onto the prepared baking sheet, leaving some space between each cookie.
