Ingredients

The original dish typically includes Bosnian sausages and cheese, but in the Banjar version, we replace them with sautéed vegetables and a tangy tomato sauce to cater to the Banjar cuisine's preferences. Preparation

1.Preheat the oven to 180°C (350°F).

2.Slice the lepinja breads in half horizontally and place them on a baking sheet. Toast them in the oven for 5 minutes until slightly crispy.

3.In a bowl, whisk the eggs and season with salt and pepper.

4.Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced bell peppers, onion, and mushrooms. Sauté until the vegetables are tender and slightly caramelized.

5.Push the sautéed vegetables to one side of the skillet and pour the whisked eggs into the other side. Scramble the eggs until cooked to your desired consistency.

6.In a separate saucepan, heat the tomato sauce over low heat until warmed through.

7.To assemble, spread a generous amount of tomato sauce on the bottom half of each lepinja bread. Top with a portion of the scrambled eggs and sautéed vegetables. Garnish with fresh parsley.

8.Place the top half of the lepinja bread on each sandwich and serve warm.
