Ingredients

While the Chinese spring rolls are typically made with a soy-based filling and wrapped in a thin wheat-based wrapper, our Greek-style Spring Rolls feature a filling of Mediterranean vegetables and herbs, wrapped in crispy filo pastry. Additionally, we serve them with a refreshing tzatziki sauce instead of the traditional dipping sauce. We alse have the original recipe for Spring Rolls, so you can check it out.

Preparation

  1. 1.
Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  2. 2.
Add the sliced red bell pepper and zucchini to the pan, and cook for 3-4 minutes until slightly softened.
  3. 3.
Stir in the cherry tomatoes and cook for an additional 2 minutes. Remove from heat and let the mixture cool.
  4. 4.
In a bowl, combine the cooled vegetable mixture with crumbled feta cheese, chopped parsley, and chopped mint. Season with salt and pepper to taste.
  5. 5.
Preheat the oven to 180°C (350°F).
  6. 6.
Lay one sheet of filo pastry on a clean surface and brush it lightly with melted butter. Place another sheet on top and repeat the process until you have a stack of 6 sheets.
  7. 7.
Cut the filo pastry stack into 4 equal strips.
  8. 8.
Place a spoonful of the vegetable and feta mixture at the bottom of each strip. Fold the sides over the filling and roll tightly to form a spring roll shape.
  9. 9.
Repeat the process with the remaining filo pastry sheets and filling.
  10. 10.
Place the spring rolls on a baking sheet lined with parchment paper. Brush the tops with melted butter.
  11. 11.
Bake in the preheated oven for 20-25 minutes, or until the spring rolls are golden and crispy.
  12. 12.
Serve the Greek-style Spring Rolls warm with tzatziki sauce for dipping.

Treat your ingredients with care...

  • Filo pastry — Handle the filo pastry gently and keep it covered with a damp cloth to prevent it from drying out.
  • Tzatziki sauce — For a creamier tzatziki sauce, strain the grated cucumber before mixing it with the yogurt to remove excess moisture.

Tips & Tricks

  • To add a hint of Greek flavor, sprinkle some crumbled feta cheese on top of the spring rolls before baking.
  • If you prefer a lighter version, you can brush the spring rolls with olive oil instead of melted butter.
  • Experiment with different vegetables such as eggplant or spinach to create your own unique Greek-style spring rolls.
  • Serve the spring rolls immediately after baking to enjoy their crispy texture.
  • These spring rolls can be prepared in advance and stored in the refrigerator. Reheat them in the oven for a few minutes before serving.
