Ingredients
While the Chinese spring rolls are typically made with a soy-based filling and wrapped in a thin wheat-based wrapper, our Greek-style Spring Rolls feature a filling of Mediterranean vegetables and herbs, wrapped in crispy filo pastry. Preparation

1.Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

2.Add the sliced red bell pepper and zucchini to the pan, and cook for 3-4 minutes until slightly softened.

3.Stir in the cherry tomatoes and cook for an additional 2 minutes. Remove from heat and let the mixture cool.

4.In a bowl, combine the cooled vegetable mixture with crumbled feta cheese, chopped parsley, and chopped mint. Season with salt and pepper to taste.

5.Preheat the oven to 180°C (350°F).

6.Lay one sheet of filo pastry on a clean surface and brush it lightly with melted butter. Place another sheet on top and repeat the process until you have a stack of 6 sheets.

7.Cut the filo pastry stack into 4 equal strips.

8.Place a spoonful of the vegetable and feta mixture at the bottom of each strip. Fold the sides over the filling and roll tightly to form a spring roll shape.

9.Repeat the process with the remaining filo pastry sheets and filling.

10.Place the spring rolls on a baking sheet lined with parchment paper. Brush the tops with melted butter.

11.Bake in the preheated oven for 20-25 minutes, or until the spring rolls are golden and crispy.

12.Serve the Greek-style Spring Rolls warm with tzatziki sauce for dipping.
